Auricchio Provolone Cheese in Di Palo's Italian Food Shop Window in Little Italy in New York City. Traditional Italian products store in Little Itlaly . In the 1960s the influx of Italians in this country decreased dramatically as immigration policies changed . During the next twenty years , the Italian community drastically reduced. It was then that I realized that the trace of an Italian immigrant who had settled in Little Italy New York City needs to be preserved . When the father of the current owner , Savino , known as Sam , retirees, I, along with his brother Salvatore and his sister, Mary realized that progress had to first look back. It had become clear that we had to follow one of the greatest contributions of Italian immigrants granted to the United States and appreciation of traditional foods . His mission became rediscover what my great-grandfather , Savino DiPalo I left Italy in 1903. By making frequent trips to Italy, sought to select authentic flavors and traditional products of the twenty regions. Along with this, bring back the knowledge and history of these authentic flavors. He has left his obligation not only to meet the producers but also to visit the farms at harvest time and see the animals and the land they graze in order to ensure that these products are of the highest standards and quality . And now his son Sam , the fifth generation of the family, passionate about this work , has spent four years in Italy recovering their assets and ensuring that family - family - has come full circle to share the vision of his tataraabuelo , Savino DiPalo he began. - September 2013
